Rice with Duck and
Prawns (Riso con Anitra e Gamberetti) Recipe
Ingredients

50g/1/4 cup unsalted
(sweet) butter
-
15ml/1 tbsp olive oil
-
1 large onion, chopped
-
1 garlic clove, chopped
-
1 red pepper, diced
-
5ml/1 tsp chopped fresh
oregano
-
100g/1 cup cooked duck
breast meat, diced
-
salt and freshly ground
black pepper
-
225g/1 cup risotto rice
-
100g/4 oz cooked, peeled
prawns (shrimp)

750ml/3 cups chicken stock
Method:

Melt half the butter in a large pan and add the oil.
Stir in the onion, garlic and red pepper and fry for
5 minutes until the onion is soft and translucent.

Stir in the oregano, duck, meat, salt and pepper and
cook for 5 minutes until the duck is brown.

Pour in
the rice and cook over a gentle heat for 5 minutes.
Roughly chop the prawns and add to the saucepan with
half of the stock.

Simmer, stirring frequently,
until the liquid is absorbed. Pour in the remaining
stock, a little at a time and continue cooking
until the rice is tender but still firm.

Remove the
pan from the heat and stir in the remaining butter.
Serve immediately.
