Spinach and Rice
Mould (Sformato di Spinaci e Riso) Recipe
Ingredients
-
450 g/1lb spinach,
cooked and finely chopped
-
100 g/4 oz/1 cup
cooked long-grain rice
-
25 g/1 oz/2 tbsp
unsalted (sweet) butter
-
100 g/4 oz/1 cup
Parmesan cheese, grated
-
5ml/1 tsp lemon
juice
-
Salt and freshly
ground black pepper
-
15 ml/1 tbsp
coriander (cilantro),
chopped
Method:
-
Mix the spinach in a
large bowl with the rice, butter and half of the
cheese.

Add the lemon juice and season with the salt
and pepper. Place in a greased ovenproof dish and
press down well.

Sprinkle over the coriander and
place the dish in a roasting tin (pan) of boiling
water.

Bake in a preheated
oven at
180°C/350°F/gas mark 4
for 30 minutes.
Sprinkle over the remaining cheese before serving.
