Italian Rice Recipes - Spinach and Rice Mould (Sformato di Spinaci e Riso) Recipe

Ingredients

  • 450 g/1lb spinach, cooked and finely chopped

  • 100 g/4 oz/1 cup cooked long-grain rice

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 100 g/4 oz/1 cup Parmesan cheese, grated

  • 5ml/1 tsp lemon juice

  • Salt and freshly ground black pepper

  • 15 ml/1 tbsp coriander (cilantro), chopped


Method:

  1. Mix the spinach in a large bowl with the rice, butter and half of the cheese.

  2. Add the lemon juice and season with the salt and pepper. Place in a greased ovenproof dish and press down well.

  3. Sprinkle over the coriander and place the dish in a roasting tin (pan) of boiling water.

  4. Bake in a preheated oven at 180°C/350°F/gas mark 4 for 30 minutes. Sprinkle over the remaining cheese before serving.
