Baked Cherry Risotto

Ingredients
Serves 4-6
Method:

Put the milk in a large, heavy-based saucepan with
1/4 cup of the sugar and the vanilla extract. Bring
just to a boil.

Add the rice, reduce the heat, and
simmer very gently, stirring frequently, for 25-35
minutes or until the rice is creamy but the grains
are still firm. Remove from the heat and stir in the
cream.

Scatter the cherries in a 4 1/2-cup shallow
ovenproof dish or individual ovenproof dishes. Spoon
the risotto over the cherries, spreading it to the
edges of the dish.

Sprinkle with the remaining
sugar and cook under a preheated broiler for 4-5
minutes until the sugar has caramelized. Leave to
cool slightly before serving.
