Italian Desserts Recipes - Baked Cherry Risotto Recipe

Ingredients

  • 2 cups low-fat milk

  • 1/2 cup superfine sugar

  • 1 teaspoon vanilla extract

  • 1/2 cup risotto rice

  • 2/3 cup heavy cream

  • 13 ounces fresh cherries, pitted and halved

Serves 4-6


Method:

  1. Put the milk in a large, heavy-based saucepan with 1/4 cup of the sugar and the vanilla extract. Bring just to a boil.

  2. Add the rice, reduce the heat, and simmer very gently, stirring frequently, for 25-35 minutes or until the rice is creamy but the grains are still firm. Remove from the heat and stir in the cream.

  3. Scatter the cherries in a 4 1/2-cup shallow ovenproof dish or individual ovenproof dishes. Spoon the risotto over the cherries, spreading it to the edges of the dish.

  4. Sprinkle with the remaining sugar and cook under a preheated broiler for 4-5 minutes until the sugar has caramelized. Leave to cool slightly before serving.
