Italian Desserts Recipes - Dessert Wine with Florentine Brittle Risotto Recipe

Ingredients

  • 1/4 cup superfine sugar

  • 2 cups water

  • 1 cinnamon stick, halved

  • 1 1/4 cups sweet dessert wine

  • 2/3 cup risotto rice

  • 1/3 cup heavy cream

Florentine Brittle:

  • vegetable oil, for brushing

  • 2 tablespoons unsalted butter

  • 2 tablespoons superfine sugar

  • 1/4cup flaked almonds

  • 1/4 cup raisins

  • 3 glace cherries, chopped

  • 1 teaspoon all-purpose flour

Serves 4


Method:

  1. First make the brittle. Lightly oil a baking sheet. Melt the butter in a small saucepan, ther1 stir in the sugar until dissolved. Add the remaining brittle ingredients and stir well. Spoon onto the prepared baking sheet and spread very thinly.

  2. Bake in a preheated oven at 350°F for 15-20 minutes until deep golden. Remove from the oven and leave on the baking sheet until cool. Lift from the sheet and transfer to a plate.

  3. Meanwhile, make the risotto. Put the sugar in a large, heavy-based saucepan with the water and heat until the sugar dissolves.

  4. Add the cinnamon stick, wine, and rice. Bring to a boil, reduce the heat, and simmer gently, stirring frequently, for 25-35 minutes or until the rice is creamy but the grains are still firm.

  5. Stir the cream into the risotto and spoon into dishes. Break the Florentine brittle into pieces and scatter over the risotto before serving.
