Strawberry Risotto Recipe

8 oz small strawberries

cup orange-flavored liqueur (optional)

cup superfine sugar, plus
3
tablespoons

2 cups low-fat milk
-
2 tablespoons unsalted butter

1/2 cup risotto rice

mint sprigs, to decorate
Serves 4
Method:
-
Thinly slice the strawberries and put them in a
bowl with the orange-flavored liqueur, if using,
and 3 tablespoons sugar.

Bring the milk almost to a boil in a saucepan
with the remaining sugar.

Melt the butter in a large heavy-based saucepan.
Add the rice and stir well to coat the grains
with the butter.

Pour the hot milk over the rice and cook gently
on the lowest possible heat, stirring
frequently, for about 25-35 minutes or until the
rice is creamy but the grains are still firm.

Lightly fold the strawberries and juices into
the risotto and serve immediately, decorated
with mint sprigs.
