Italian Desserts Recipes - Venetian Rice Pudding Recipe

Ingredients

  • 3/4 cup golden raisins

  • 1/3 cup medium sherry (optional)

  • 2 1/2 cups hot low-fat milk

  • 2/3 cup heavy cream

  • 1 vanilla pod, split lengthwise, or 2 teaspoons vanilla extract

  • 1/4 cup superfine sugar

  • 1/2 teaspoon apple pie spice

  • finely grated zest of 1 lemon

  • 2/3 cup risotto rice

  • lemon zest strips, to decorate

Serves 4


Method:

  1. Put the raisins in a bowl with the sherry, if using, and leave to soak while you make the risotto.

  2. Put the milk in a saucepan with the cream, vanilla pod or extract, sugar, spice, and lemon zest and bring almost to a boil.

  3. Add the rice and cook on the lowest heat, stirring frequently, for 20-30 minutes or until the rice is creamy but the grains are still firm.

  4. Stir in the raisins and any sherry from the bowl and serve warm or cold decorated with lemon zest strips.
