Spicy Chicken and Broccoli Recipe
Ingredients

3 tablespoons butter
-
1/4 cup olive oil
-
2 skinless, boneless
chicken breasts, diced
-
1/2 onion, very finely chopped
-
1 garlic clove, finely
chopped
-
1-2 fresh red chilies,
seeded, and very finely
chopped
-
1 1/2 cups risotto rice
-
4 1/2 cups hot Chicken
Stock
-
8 ounces broccoli florets
-
1/3 cup freshly grated
Parmesan cheese
-
salt and pepper
Serves 4
Method:
-
Melt 1 tablespoon of the butter with the oil in a
heavy-based saucepan. Add the diced chicken and
sauté gently for 2-3 minutes.

Add the onion and
sauté for 5 minutes, until softened but not colored.
Add the garlic and chili and cook until the garlic
is golden.

Add the rice to the pan and stir well
to coat the grains with the butter and oil. Add the
hot stock, a large ladleful at a time, stirring
until each addition is absorbed into the rice.

Continue adding stock in this way, cooking until the
rice is creamy but the grains are still firm. This
should take about 20 minutes.

Plunge the broccoli
florets into a pan of boiling water for 1 minute.
Drain thoroughly and add to the rice with the
Parmesan.

Season to taste with salt and pepper and
stir in the remaining butter. Cover and leave the
risotto to rest for a few minutes before serving.
