Salad (Insalata di Carote e Indivia) Recipe
Ingredients

2 chicory (Belgian
endive) heads
-
2 carrots, grated
-
45 ml/3 tbsp virgin
olive oil
-
1/2 garlic clove,
crushed
-
15 ml/1 tbsp chopped
fresh parsley
-
Pinch of salt
Method:
-
Trim the outer leaves of the chicory and cut a
cone-shaped core out of the base of each.

Cut the
leaves in strips and place in a large bowl with the
grated carrot.
-
Blend the oil, garlic, parsley and
salt together in a small bowl and pour over the
salad.
-
Toss and allow to marinate for 10 minutes
before serving.
