Ingredients

2 eggs, hard-boiled
(hard-cooked)

1 egg yolk
-
10 ml/2 tsp made
mustard
-
45 ml/3 tbsp olive
oil
-
15 ml/1 tbsp wine
vinegar
-
1 celeriac (celery
root), cut in thin matchsticks

Salt and freshly
ground black pepper
Method:

Blend the yolks of the hard-boiled eggs with the extra egg yolk and
mustard.

Whisk in the olive oil, a little at a time.
Stir in the wine vinegar.

Season the dressing with
salt and pepper and pour over the celeriac.
-
Leave to
stand for at least an hour before serving.
