Italian Salads Recipes - Celeriac Salad (Insalata di Apio) Recipe

Ingredients 

  • 2 eggs, hard-boiled (hard-cooked)

  • 1 egg yolk

  • 10 ml/2 tsp made mustard

  • 45 ml/3 tbsp olive oil

  • 15 ml/1 tbsp wine vinegar

  • 1 celeriac (celery root), cut in thin matchsticks

  • Salt and freshly ground black pepper


Method:

  1. Blend the yolks of the hard-boiled eggs with the extra egg yolk and mustard.

  2. Whisk in the olive oil, a little at a time. Stir in the wine vinegar.

  3. Season the dressing with salt and pepper and pour over the celeriac.

  4. Leave to stand for at least an hour before serving.
