Ingredients

2 chicory (Belgian
endive) heads

60 ml/4 tbsp virgin
olive oil
-
1/2 garlic clove,
crushed
-
Pinch of salt
-
15 ml/1 tbsp
chopped fresh mint
Method:
-
Trim the outer leaves
of the chicory and cut a cone-shaped core out of the
base of each.
-
Cut the leaves in halves. Blend the
oil, garlic and salt together in a small bowl and
stir in the mint.
-
Lay the chicory in a shallow dish
and pour over the dressing.
