Genoese Salad (Insalata
Genovese) Recipe
Ingredients

1/2 cucumber, chopped
-
2 large tomatoes,
thinly sliced
-
4 slices prosciutto
-
8 slices salami
-
2 eggs, hard-boiled
(hard-cooked) and halved
-
45 ml/3 tbsp olive
oil
-
15 ml/1 tbsp
tarragon vinegar
-
Salt and freshly
ground black pepper
-
1 garlic clove, crushed
Method:
-
Arrange the cucumber
over the base of a serving dish with the tomato
slices in the centre.

Roll up the prosciutto and
place over the salad with the salami and olives. Place the eggs on top of the salami.

Blend the olive oil with the
vinegar, salt, pepper and garlic and pour over the
salad. Chill for 15 minutes before serving.
