Italian Salads Recipes - Haricot Bean Salad (Insalata di Fagioli) Recipe

Ingredients 

  • 225 g/8 oz/1 1/3 cups dried haricot (navy) beans (or use 2 X 425 g/2 X 15 oz/2 large cans)

  • 1 onion, chopped

  • 5 ml/1 tsp chopped fresh tarragon

  • 1 garlic clove, crushed

  • 30 ml/2 tbsp olive oil

  • 2.5 ml/1/2 tsp vinegar

  • Salt and freshly ground black pepper


Method:

  1. Soak the haricot beans overnight. Next day place in a large pan of water.

  2. Bring to the boil and boil rapidly for 10 minutes until soft.

  3. Alternatively, drain the canned beans, rinse and drain again. Mix the chopped onion with the tarragon, garlic and oil.

  4. Blend in the vinegar and mix with the beans. Season with salt and pepper.
