Salad (Insalata di Frutti di Mare all' Italiana) Recipe
Ingredients
-
75 ml/5 tbsp virgin
olive oil
-
45 ml/3 tbsp lemon
juice
-
1 garlic clove,
crushed
-
15 ml/1 tbsp chopped
fresh parsley
-
15 ml/1 tbsp snipped fresh chives
-
Salt
and freshly ground black pepper
-
450 g/1lb cooked,
whole prawns (shrimp)
-
450 g/1lb cooked
squid, sliced
-
225 g/8 oz shelled,
cooked scallops
-
450 g/1lb mussels, steamed, opened and removed from
the shells
-
1 red (bell)
pepper, grilled and skinned
-
1/2 cucumber, seeded
and cut into 5 cm/2 in chunks

8 black olives,
stoned (pitted)
-
30 ml/2 tbsp chopped
fresh parsley
Method:
-
Mix the olive oil, lemon juice, crushed garlic,
chopped parsley and chives together in a large bowl
and season with the salt and pepper.

Save a few
prawns for garnishing, peel the remainder and add
with the cooked squid, scallops and mussels to the
bowl.

Slice the red pepper thinly and add to the
seafood. Season with the salt and pepper and add the
cucumber and black olives.

Turn gently to coat
lightly in the dressing and chill for 1 hour.

Just
before serving, garnish with the chopped parsley and
the reserved prawns.
