Italian Salads Recipes - Jerusalem Artichoke Salad (Insalata Topinambur) Recipe

Ingredients

  • 450 g/1lb Jerusalem artichokes, scrubbed or peeled

  • Salt

  • 60 ml/4 tbsp olive oil

  • 30 ml/2 tbsp lemon juice

  • Freshly ground black pepper


Method:

  1. Wash and peel the artichokes, shaping them into a uniform size.

  2. Place immediately in a pan of water and add half the lemon juice and a pinch of salt.

  3. Boil for 10-15 minutes until tender. Drain.

  4. Mix the oil and the remaining lemon juice and toss with the artichokes. Add a good grinding of pepper.
