Artichoke Salad (Insalata Topinambur) Recipe
Ingredients
Method:

Wash and peel the artichokes, shaping them into a
uniform size.

Place immediately in a pan of water
and add half the lemon juice and a pinch of salt.

Boil for 10-15 minutes until tender. Drain.

Mix the
oil and the remaining lemon juice and toss with the
artichokes. Add a good grinding of pepper.
