Italian Recipes - Milanese Green Salad (Insalata Verde Milanese) Recipe
Ingredients
1/2 garlic clove
100 g/4 oz chicory (Belgian endive)
1 lettuce
4 tender spinach leaves
1.5 m/1/4 tsp dry mustard
45 ml/3 tbsp olive oil
15 ml/1 tbsp wine vinegar
Method:
Rub the insides of the salad bowl with the cut garlic clove. Cut a cone-shaped core out of the chicory and tear the leaves into pieces.
Place in a salad bowl. Tear the lettuce and spinach leaves in to pieces and place in the bowl.
Sprinkle over the dry mustard. Blend the oil and vinegar and pour this dressing over the salad leaves.
Toss lightly until the dressing is absorbed. Serve with meat dishes.
