Italian Salads Recipes - Mixed Mushroom Salad (Insalata di Funghi) Recipe

Ingredients 

  • 750 g/1 1/2lb mixed mushrooms (chanterelle, morel, shiitake, oyster and button), trimmed and cut up if large

  • 90 ml/6 tbsp olive oil

  • 1 green chili, seeded and chopped

  • 1 large garlic clove, finely chopped

  • 45 ml/3 tbsp chopped fresh parsley

  • Freshly ground black pepper

  • Coarse sea salt

  • Lemon or lime wedges


Method:

  1. Plunge the mushrooms in boiling water for 30 seconds. Drain on kitchen paper.

  2. Heat the oil in a large saucepan. Add the mushrooms, chili and garlic and cook gently, stirring occasionally until the mushrooms are tender. Leave to cool.

  3. Turn into a serving dish, sprinkle with the parsley, a good grinding of pepper and some coarse sea salt.

  4. Serve with lemon or lime wedges to squeeze over.
