Mixed Mushroom
Salad (Insalata di Funghi) Recipe
Ingredients
-
750 g/1 1/2lb mixed
mushrooms (chanterelle, morel, shiitake, oyster and
button), trimmed and cut up if large
-
90 ml/6 tbsp olive
oil
-
1 green chili,
seeded and chopped
-
1 large garlic clove, finely
chopped
-
45 ml/3 tbsp
chopped fresh parsley
-
Freshly ground black pepper
-
Coarse sea salt
-
Lemon or lime
wedges
Method:
-
Plunge the mushrooms in boiling water for 30
seconds. Drain on kitchen paper.

Heat the oil in a
large saucepan. Add the mushrooms, chili and
garlic and cook gently, stirring occasionally until
the mushrooms are tender. Leave to cool.

Turn into a
serving
dish, sprinkle with the parsley, a
good
grinding of pepper and some coarse sea salt.

Serve
with lemon or lime wedges to squeeze over.
