Italian Salads Recipes - Mozzarella Salad with Ratatouille (Peperonata con Melanzane e Mozzarella) Recipe

Ingredients 

  • 1 aubergine (eggplant), cut in chunks

  • 2 courgettes (zucchini), sliced

  • 5 ml/1 tsp salt

  • 1 orange (bell) pepper, sliced

  • 1 onion, sliced

  • 2 garlic cloves, crushed

  • 45 ml/3 tbsp olive oil

  • Salt and freshly ground black pepper

  • 15 ml/1 tbsp tarragon vinegar

  • 100 g/4 oz/1 cup Mozzarella cheese, grated

  • 15 ml/1 tbsp chopped fresh parsley

  • Sicilian Bread, to serve


Method:

  1. Place the aubergine and courgettes in a colander and sprinkle with the salt.

  2. Leave to stand for 20 minutes, then rinse and pat dry with kitchen paper.

  3. Fry (sauté) all the vegetables with the garlic in the oil for 6-8 minutes until softened.

  4. Season with the salt and pepper and stir in the vinegar. Place on a large serving dish and top with Mozzarella.

  5. Sprinkle over the parsley and serve with Sicilian Bread.
