Italian Salads Recipes - Pasta and Vegetable Salad (Insalata di Pasta e Verdura) Recipe

Ingredients 

  • 225 g/8 oz tri-colored pasta spirals

  • 100 g/4 oz fresh or frozen broad (lima) beans

  • 3 celery sticks, thinly sliced

  • 30 ml/2 tbsp white wine vinegar

  • 60 ml/4 tbsp olive oil

  • Salt and freshly ground black pepper


Method:

  1. Cook the pasta in boiling salted water until it is tender but still firm.

  2. Drain, rinse with cold water and drain again. Allow to cool.

  3. Cook the broad beans in boiling, salted water for 5 minutes until they are tender.

  4. Drain and rinse with cold water, drain again and allow to cool.

  5. Mix the pasta and beans together with the celery and blend in the vinegar and oil.

  6. Season well with the salt and pepper.
