Pear and Parmesan
Salad (Insalata di Pere e Parmigiano) Recipe
Ingredients

30 ml/2
tbsp
olive oil
-
15 ml/1 tbsp white
wine vinegar
-
45 ml/3 tbsp chopped
fresh parsley
-
Salt and freshly ground black pepper
-
1.5 m/1/4 tsp grated nutmeg
-
2 large ripe
dessert pears, thinly sliced

100 g/4 oz Parmesan
cheese, in one piece
-
50 g/2 oz/1/2 cup
walnuts, chopped

Mixed salad leaves
Method:

Put the oil, vinegar and parsley into a bowl and season with the salt,
pepper and nutmeg.

Blend well and add the pears.
Chill. Shave the Parmesan cheese with a potato
peeler.

Mix the chopped walnuts with the cheese.
Serve the pears and dressing on a bed of salad
leaves, garnished with the walnuts and cheese.
