Italian Salads Recipes - Piedmont Salami Salad (Insalata di Salame Piemontese) Recipe

Ingredients 

  • 175 g/6 oz sliced salami

  • 2 celery sticks, chopped

  • 400 g/14 oz/1 large can artichoke hearts, drained

  • 1 green (bell) pepper, cut into thin strips

  • 100 g/4 oz button mushrooms, quartered

  • 100 g/4 oz French (green) beans, cooked

  • 2 large tomatoes, sliced

  • 4 radicchio leaves

Dressing:

  • 1 garlic clove, crushed

  • Salt and freshly ground black pepper

  • 5 ml/1 tsp made mustard

  • 45 ml/3 tbsp olive oil

  • 15 ml/1 tbsp rosemary vinegar

  • Black olives, to garnish

  • 2 eggs, hard-boiled (hard-cooked) and quartered


Method:

  1. Place the salami in a large salad bowl with all the salad ingredients, except the radicchio.

  2. Place the radicchio in a serving dish. Whisk the garlic, salt, pepper, mustard, olive oil and vinegar in a small bowl.

  3. Pour the dressing over the salad and toss well. Garnish with the black olives and quartered eggs.
