Quick Tuna and
Pepper Salad (Insalata di Tonno e Pepperoni) Recipe
Ingredients

150 g/5 oz/2/3 cup
long-grain rice
-
1 red (bell)
pepper, thinly sliced
-
4 gherkins (cornichons),
roughly chopped
-
3 eggs, hard-boiled
(hard-cooked) and quartered
-
185 g/6 lb oz/1
small can tuna in oil
-
30 ml/2 tbsp wine or herb
vinegar
-
Salt and freshly ground black pepper
-
30 ml/2
tbsp chopped fresh parsley
Method:

Put the rice in a pan of boiling water and bring to the boil. Simmer for
10 minutes until tender.

Drain, rinse with cold
water and drain again. Turn into a salad bowl. Add
the pepper and gherkins.

Drain the oil from the tuna
into a small bowl and stir in the vinegar.

Season
with the salt and pepper. Flake the fish and add to
the salad.

Pour over the dressing and garnish with
chopped parsley.
