Italian Salads Recipes - Quick Tuna and Pepper Salad (Insalata di Tonno e Pepperoni) Recipe

Ingredients 

  • 150 g/5 oz/2/3 cup long-grain rice

  • 1 red (bell) pepper, thinly sliced

  • 4 gherkins (cornichons), roughly chopped

  • 3 eggs, hard-boiled (hard-cooked) and quartered

  • 185 g/6 lb oz/1 small can tuna in oil

  • 30 ml/2 tbsp wine or herb vinegar

  • Salt and freshly ground black pepper

  • 30 ml/2 tbsp chopped fresh parsley


Method:

  1. Put the rice in a pan of boiling water and bring to the boil. Simmer for 10 minutes until tender.

  2. Drain, rinse with cold water and drain again. Turn into a salad bowl. Add the pepper and gherkins.

  3. Drain the oil from the tuna into a small bowl and stir in the vinegar.

  4. Season with the salt and pepper. Flake the fish and add to the salad.

  5. Pour over the dressing and garnish with chopped parsley.
