Italian Salads Recipes - Red Cabbage Pickle (Cavolo Rosso Sott' Aceto) Recipe

Ingredients 

  • 1 red cabbage, finely shredded

  • 5 ml/1 tsp salt

  • 45 ml/3 tbsp tarragon vinegar

  • 45 ml/3 tbsp chopped fresh chervil

  • 45 ml/3 tbsp chopped fresh tarragon

  • 6 radishes, sliced


Method:

  1. Plunge the cabbage in boiling water to which the salt and half the tarragon vinegar have been added.

  2. Remove from the heat immediately. Allow to stand for 10 minutes. Drain and transfer to a deep dish.

  3. Sprinkle with the remaining vinegar, the chopped chervil and tarragon leaves.

  4. Toss well. Garnish with the radish slices.
