Italian Salads Recipes - Veal and Avocado Salad (Insalata di Vitello e Avocado) Recipe

Ingredients 

  • 450 g/1lb lean cooked veal

  • 3 avocados, peeled, stoned (pitted) and sliced

  • 1 green (bell) pepper, finely chopped

  • 1/2 cucumber, peeled and chopped

  • 175 ml/3/4 cup soured (dairy sour) cream

  • Salt and freshly ground black pepper

  • 15 ml/1 tbsp lemon juice

  • 1 Cos (Romaine) lettuce, chopped


Method:

  1. Cut the veal into 1 cm/1/2 in cubes and place in a mixing bowl. Stir in the avocados, green pepper and cucumber cubes.

  2. Mix the soured cream, salt and pepper and lemon juice in a small bowl and pour the dressing over the meat mixture.

  3. Toss the ingredients together until they are well coated with the dressing.

  4. Arrange the chopped lettuce leaves on a large serving dish or individual plates and spoon the veal mixture in the centre. Chill before serving.
