Italian Salads Recipes - Warm Pasta Salad with Radishes (Insalata di Pasta Tiepida con Ravanelli) Recipe

Ingredients 

  • 225 g/8 oz spiral pasta

  • 50 g/2 oz fresh or frozen peas

  • 1 bunch of radishes

  • 5 ml/1 tsp olive oil

  • 30 ml/2 tbsp snipped fresh chives

  • 150 ml/2/3 cup single (light) cream

  • 5 ml/1 tsp lemon juice

  • Salt and freshly ground black pepper


Method:

  1. Cook the pasta in a pan of boiling salted water for 8-10 minutes and stir in the peas for the last five minutes.

  2. Cut each radish into 4 slices. Drain the pasta, stirring gently.

  3. Blend in the olive oil, chives, radishes and cream. Quickly mix in the lemon juice and season with the salt and pepper.

  4. Toss well and serve warm.
