Italian Sauces Recipes - Alfred's Sauce for Fresh Pasta (Salsa Alfredo) Recipe

Ingredients  

  • 350 g/12 oz any fresh pasta

  • 450 ml/3/4 pt/2 cups double (heavy) cream

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • 175 g/6 oz/1 1/2 cups Parmesan cheese, freshly grated

  • Freshly ground black pepper

  • A little crisp, crumbled panceua or streaky bacon (optional)


Method:

  1. Cook the fresh pasta. Drain. Meanwhile bring the cream and butter to the boil in a saucepan.

  2. Reduce the heat and simmer for 1 minute. Add half the cheese and some pepper and whisk until smooth.

  3. Add to the pasta with the remaining cheese and toss over a gentle heat.

  4. Pile on to warm plates add a good grinding of black pepper and serve topped with crumbled pancetta or streaky bacon, if liked.
