Caper and Tomato
Sauce (Salsa di Pomodoro di Capperi) Recipe
Ingredients

30 ml/2 tbsp olive
oil
-
1 onion, chopped
-
1 garlic clove,
chopped
-
3 large tomatoes,
skinned, seeded and chopped
-
60 ml/4 tbsp dry
white wine
-
15 ml/1 tbsp made
mustard
-
15 ml/1 tbsp
capers, chopped
-
30 ml/2 tbsp
chopped fresh basil
-
Salt and freshly ground black
pepper
Method:

Heat the oil in a
saucepan and fry (sauté) the onion and garlic.

Stir
in the tomatoes and white wine. Bring to the boil,
reduce the heat and simmer for 10 minutes.

Add the
mustard, capers and basil and season with the salt
and pepper.

Cook for a further 10 minutes until the
sauce thickens. Serve with meat, fish, pasta or
risotto.
