Italian Sauces Recipes - Chicken Liver Sauce (Salsa di Fegatini di Pollo) Recipe

Ingredients

  • 15 ml/1 tbsp olive oil

  • 225 g/8 oz/2 cups chicken livers, chopped

  • 2 large onions, chopped

  • 1 garlic clove, crushed

  • 75 g/3 oz salami, chopped

  • 45 ml/3 tbsp white wine

  • 400 g/14 oz/1 large can chopped tomatoes

  • 150 ml/2/3 cup chicken stock

  • Salt and freshly ground black pepper

  • 15 ml/1 tbsp chopped fresh rosemary


Method:

  1. Heat the olive oil in a pan and try (sauté) the livers until golden brown. Remove from the pan and add the onions.

  2. Fry for 4 minutes, stirring and add the garlic. Continue to cook for 1 minute.

  3. Stir in the chopped salami and the remaining ingredients. Simmer for 15 minutes and return the chicken livers to the pan.

  4. Cook for a further 2-3 minutes, adjust the seasoning and serve with pasta.
