Chicken Liver
Sauce (Salsa di Fegatini di Pollo) Recipe
Ingredients

15 ml/1 tbsp olive
oil
-
225 g/8 oz/2 cups chicken livers, chopped

2 large onions,
chopped
-
1 garlic clove,
crushed
-
75 g/3 oz salami,
chopped
-
45 ml/3 tbsp white
wine
-
400 g/14 oz/1 large
can chopped tomatoes
-
150 ml/2/3 cup chicken stock
-
Salt and freshly ground black pepper
-
15 ml/1 tbsp chopped fresh rosemary
Method:

Heat the olive oil in a pan and try (sauté) the
livers until golden brown. Remove from the pan and
add the onions.

Fry for 4 minutes, stirring and add
the garlic. Continue to cook for 1 minute.

Stir in
the chopped salami and the remaining ingredients.
Simmer for 15 minutes and return the
chicken livers to the pan.

Cook for a further 2-3 minutes, adjust the seasoning and serve
with pasta.
