Italian Sauces Recipes - Dried Mushroom Sauce (Salsa di Funghi Secchi) Recipe

Ingredients  

  • 45 ml/3 tbsp dried mushrooms

  • 300 ml/1 1/4 cups warm water

  • 15 g/1 tbsp unsalted (sweet) butter

  • 15 ml/1 tbsp oil

  • 3 bacon rashers (slices), rinded and chopped

  • 1 large onion, chopped

  • 15 ml/1 tbsp tomato puree (paste)

  • Salt and freshly ground black pepper


Method:

  1. Soak the dried mushrooms for 30 minutes in the warm water. Heat the butter and oil in a saucepan.

  2. Stir in the bacon and fry (sauté) for 1 minute. Add the onion, cook until the onion is browned.

  3. Stir in the mushrooms with their liquid. Blend in the tomato puree and simmer for 30 minutes.

  4. Season with the salt and pepper and serve very hot with meat or pasta.
