Fake Meat Sauce
for Pasta (Sugo Finto) Recipe
Ingredients

1 small onion,
finely chopped

1 carrot, finely
chopped
-
1 celery stick,
finely chopped

45 ml/3 tbsp chopped
fresh parsley

75 g/3 oz very fat ham or bacon, very finely chopped

45 ml/3 tbsp tomato puree (paste)

150 ml/2/3
cup strong beef stock

Salt and freshly ground black
pepper
Method:

Put the onion, carrot,
celery, parsley and fat ham into a saucepan and fry
(sauté) over a gentle heat until the fat runs and
the onion is translucent, stirring all the time.

Add
the remaining ingredients and simmer for about 30
minutes, stirring occasionally or until thickened
and the fat floats on the surface of the sauce.

Add
to cooked pasta, toss and serve.
Note : Enough for 450g/1 lb pasta.
