Italian Sauces Recipes - Fresh Apricot Sauce (Salsa Fresca di Albicocche) Recipe

Ingredients  

  • 250 ml/1 cup water

  • 450 g/1lb fresh apricots, halved and stoned

  • 100 g/4 oz/1/2 cup brown sugar

  • 30 ml/2 tbsp lemon juice

  • 5 ml/1 tsp finely grated lemon rind

  • 2.5 ml/1/2 tsp vanilla essence (extract


Method:

  1. Bring the water, apricots and sugar to the boil in a saucepan. Reduce the heat and simmer for 12 minutes.

  2. Allow the mixture to cool for 2 minutes and puree in a blender or food processor.

  3. Allow the sauce to cool completely before beating in the lemon juice, zest and vanilla essence.

  4. Serve with sweet pies or ice cream.
