Sauce (Salsa Fresca di Albicocche) Recipe
Ingredients

250 ml/1 cup
water
-
450 g/1lb fresh apricots, halved and stoned

100 g/4 oz/1/2 cup
brown sugar
-
30 ml/2 tbsp lemon
juice
-
5 ml/1 tsp finely grated lemon rind
-
2.5 ml/1/2 tsp
vanilla essence (extract
Method:
-
Bring the water,
apricots and sugar to the boil in a saucepan. Reduce
the heat and simmer for 12 minutes.

Allow the
mixture to cool for 2 minutes and puree in a blender
or food processor.
-
Allow the sauce to cool
completely before beating in the lemon juice, zest
and vanilla essence.
-
Serve with sweet pies or ice
cream.
