Italian Sauces Recipes - Ham and Almond Sauce (Salsa di Prosciutto e Mandorle) Recipe

Ingredients  

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 100 g/4 oz boiled ham, diced

  • 15 ml/1 tbsp groundnut (peanut) oil

  • 5 ml/1 tsp made mustard

  • 15 ml/1 tbsp chopped fresh thyme

  • 100 g/4 oz/1 cup toasted almonds, chopped

  • 120 ml/4 fl oz/1/2 cup double (heavy) cream

  • Salt and freshly ground black pepper


Method:

  1. Heat the butter in a saucepan and fry (sauté) the ham for 2 minutes.

  2. Stir in the nut oil and mustard. Cook for 2 minutes, stirring all the time.

  3. Stir in the thyme, chopped almonds, salt and pepper. Blend in the cream.

  4. Reheat and serve hot with pasta.
