Sauce (Salsa di Prosciutto e Mandorle) Recipe
Ingredients

25 g/1 oz/2 tbsp
unsalted (sweet) butter
-
100 g/4 oz boiled
ham, diced
-
15 ml/1 tbsp
groundnut (peanut) oil
-
5 ml/1 tsp made mustard
-
15 ml/1 tbsp
chopped fresh thyme
-
100 g/4 oz/1 cup toasted
almonds, chopped
-
120 ml/4 fl oz/1/2
cup double (heavy) cream
-
Salt and freshly
ground black pepper
Method:
-
Heat the butter in a
saucepan and fry (sauté) the ham for 2 minutes.

Stir
in the nut oil and mustard. Cook for 2 minutes,
stirring all the time.

Stir in the thyme, chopped
almonds, salt and pepper. Blend in the cream.
-
Reheat
and serve hot with pasta.
