Italian Sauces Recipes - Mushroom Sauce (Salsa di Funghi) Recipe

Ingredients  

  • 30 ml/2 tbsp lemon juice

  • 1 garlic clove, crushed

  • 15 ml/1 tbsp chopped fresh parsley

  • 150 ml/2/3 cup chicken stock

  • 4 mushrooms, roughly chopped

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 15 ml/1 tbsp corn flour (cornstarch)

  • 60 ml/4 tbsp tomato puree (paste)


Method:

  1. Put the lemon juice into a saucepan and add the crushed garlic, parsley and stock. Boil rapidly for 5 minutes.

  2. Add the mushrooms. Continue cooking for 5 minutes, reducing the heat for the last 2 minutes.

  3. Puree the sauce in a blender or food processor or rub the sauce through a sieve (strainer) into a bowl.

  4. Melt the butter, add the corn flour and add the sauce, stirring all the time until the sauce thickens.

  5. Remove from the heat and stir in the tomato puree. Serve at once.
