Italian Sauces Recipes - Nopoli Sauce (Salsa Nopoli) Recipe

Ingredients  

  • 45 ml/3 tbsp olive oil

  • 2 garlic cloves, crushed

  • 15 ml/1 tbsp chopped fresh rosemary

  • 4 tomatoes, skinned, seeded and chopped

  • 15 ml/1 tbsp savory or thyme, chopped

  • 45 ml/3 tbsp lime juice

  • Salt and freshly ground black pepper


Method:

  1. Heat the oil in a saucepan and cook the garlic, rosemary and tomatoes for 10 minutes until the liquid has reduced to a thick sauce.

  2. Add the savory and lime juice and puree in a blender if desired. Season to taste with the salt and pepper.

  3. Serve with pasta, fish or chicken.
