Italian Sauces Recipes - Oil and Lemon Sauce (Salmoriglio) Recipe

Ingredients  

  • 250 ml/8 fl oz/1 cup virgin olive oil

  • Grated rind and juice of 2 lemons

  • 15 ml/1 tbsp chopped fresh oregano

  • 1 large garlic clove, crushed

  • 15 ml/1 tbsp chopped fresh parsley

  • Freshly ground black pepper


Method:

  1. Put the oil in a bowl over a pan of gently simmering water.

  2. Gradually whisk in the lemon rind and juice, then the oregano, garlic and parsley.

  3. Add a good grinding of black pepper and use to brush over fish or meat as it grills (broils) or to serve drizzled over plain cooked meat or fish at the table.
