Sauce (Salmoriglio) Recipe
Ingredients
250 ml/8 fl oz/1 cup
virgin olive oil
Grated rind and juice of 2 lemons
15 ml/1
tbsp chopped fresh oregano
1 large garlic clove,
crushed
15 ml/1 tbsp chopped
fresh parsley
Freshly ground black pepper
Method:
Put the oil in a bowl over a pan of gently simmering water.
Gradually
whisk in the lemon rind and juice, then the oregano, garlic and
parsley.
Add a
good
grinding of black pepper and use to
brush over fish or meat as it grills (broils) or to
serve drizzled over plain cooked meat or fish at the
table.
