Sauce (Agliata Piccante) Recipe
Ingredients

1 thick slice white
bread, crusts removed

30 ml/2 tbsp white
wine vinegar
-
4-5 garlic cloves, peeled

150 ml/2/3
cup olive oil
-
Salt and freshly
ground black pepper
Method:
-
Break the bread into pieces and soak in the vinegar. Puree the garlic in
a blender or food processor.
-
With the machine
running, add the oil a little at a time, stopping
and scraping down the sides of the machine every now
and then.
-
Drop in the bread a piece at a time,
blending all the time until a thin mayonnaise-like
consistency is reached.

Season well and serve with
any type of seafood or as a dip.
