Italian Sauces Recipes - Sauce of the Honey Bees (Sausse di Avije) Recipe

Ingredients  

  • 12 walnut halves

  • 30 ml/2 tbsp boiling water

  • 1.5 ml/1/4 tsp beef extract

  • 20 ml/4 tsp French mustard

  • 100 g/4 oz/1/3 cup clear honey

  • Freshly ground black pepper


Method:

  1. Plunge the walnuts in boiling water for 2 minutes. Drain and rub off the skins.

  2. Puree in a blender or food processor or pound with a pestle and mortar.

  3. Blend the water and beef extract together and blend into the nuts with the mustard and honey.

  4. Season well with pepper and serve with cold meats.
