Italian Sauces Recipes - Tomato Sauce with Cream (Salsa di Pomodoro con Panna) Recipe

Ingredients  

  • 75 g/3 oz/1/2 cup unsalted (sweet) butter

  • 1 onion, chopped

  • 2 large tomatoes, skinned, seeded and chopped

  • 60 ml/4 tbsp red wine

  • 15 ml/1 tbsp chopped fresh basil

  • Salt and freshly ground black pepper

  • 60 ml/4 tbsp double (heavy) cream


Method:

  1. Heat half the butter in a saucepan and fry (sauté) the onion for 2 minutes.

  2. Stir in the tomatoes and red wine. Bring to the boil, reduce the heat and simmer for 10 minutes until the sauce is pulpy.

  3. Add the basil and season with the salt and pepper. Cook for a further 10 minutes. Remove from the heat and allow to cool for 5 minutes.

  4. Stir in the remaining butter, stirring until all the butter has been incorporated.

  5. Mix in the cream. Reheat but do not boil. Serve with chicken, veal or pasta.
