Italian Snacks and Light Meals Recipes - Anchovy Bakes (Infornate all' Acciuga) Recipe

 

Ingredients

  • 8 thick slices bread

  • 75 ml/5 tbsp olive oil

  • 1 garlic clove, cut in half

  • 50 g/2 oz/1 small can anchovies

  • 225 g/8 oz Mozzarella cheese, sliced

  • 200 g/7 oz/good 1 cup olives, stoned (pitted)

  • Fresh parsley, to garnish


Method:

  1. Brush both sides of the bread with olive oil. Bake in a preheated oven at 190°C/ 375°F/gas mark 5 for 5 minutes or toast under a moderate grill (broiler).

  2. Cut the garlic in half and rub over one side of each piece of bread. Drain the anchovies and separate them gently.

  3. Arrange on the bread and cover with slices of Mozzarella. Add the olives and bake or grill (broil) until the cheese has melted. Garnish with the fresh parsley.
