Italian Snacks and Light Meals Recipes - Anchovy Bread (Focaccia all' Acciuga) Recipe

 

Ingredients

  • 225 g/8 or/1 cup unsalted (sweet) butter, softened

  • 1 garlic clove, crushed

  • 6 anchovies, finely chopped

  • 2.5 ml/1/2 tsp salt

  • Rosemary Focaccia bread


Method:

  1. Cream the butter, garlic and anchovies together. Slice the bread crosswise to within 5 mm/1/4 in of the bottom.

  2. Spread the butter mixture generously on one side of each of the slices.

  3. Wrap the loaf in foil and place on a baking sheet in the oven.

  4. Bake in a preheated oven at 200°C/400°F/gas mark 6 for 15 minutes. Remove from the foil and serve while still warm.

  5. This is also good served with soup.
