Italian Snacks and Light Meals Recipes - Apricot Sandwiches (Tramezzini alle Albicocche) Recipe

Ingredients

  • 450 g/1 lb fresh apricots

  • 8 thick slices of bread

  • 75 ml/5 tbsp caster (superfine) sugar

  • 10 ml/2 tsp ground cinnamon

  • 5 ml/1 tsp grated nutmeg

  • 150 ml/2/3 cup milk

  • 2 eggs, lightly beaten

  • 50 g/2 oz/1/2 cup butter


Method:

  1. Place the apricots in a basin of boiling water and leave for 1 minute. Drain, peel off the skins, discard the stones (pits) and slice thinly.

  2. Remove the crusts from the bread. Divide the apricots between half the bread.

  3. Mix half the sugar, the cinnamon and nutmeg together. Sprinkle a little of this mixture over the apricots reserving the rest.

  4. Top with the remaining slices of bread. Mix the remaining sugar, milk and eggs together in a shallow plate.

  5. Heat the butter in a frying pan (skillet). Dip the apricot sandwiches in the egg mixture and fry (sauté) on both sides until golden brown.

  6. Remove from the pan and cut each sandwich in half. Sprinkle over the remaining sugar and spice mix and serve immediately.
