Artichoke Omelet (Frittata di Carciofi) Recipe
Ingredients

50 g/2 Oz/1/4 cup unsalted
(sweet) butter

400 g/14 oz/1 large can
artichoke hearts, drained and chopped

30 ml/2 tbsp single (light)
cream
-
Salt and
freshly ground black pepper

6 eggs
Method:

Heat the butter in a saucepan and add the artichoke
hearts. Sauté for 2-3 minutes.

Add the cream and season with the salt and pepper.
Keep hot.

Heat the remaining butter in a frying pan (skillet).
Beat the eggs, season with salt and pepper and pour
into the pan.

Cook for 3 minutes until nearly set and add the
artichoke mixture.

Fold the omelets over and cook for 1 minute to make
sure the omelets is firm.

Turn out on to a heated serving dish and serve
immediately.
