Avellino Prawn Fritters (Fritelle di Gamberette alla
Avellino)

Ingredients

100 g/1 cup
plain (all-purpose) flour

1 egg
-
150 ml/2/3 cup
milk
-
15 ml/1 tbsp
chopped fresh parsley

5 ml/1 tsp
bicarbonate of soda (baking soda)

Salt and freshly
ground black pepper

450 g/1lb king prawns (jumbo shrimp), peeled

Oil for deep-frying

Napoli Sauce, to serve
Method:

Sift the flour into a bowl and beat in the egg,
milk, parsley, bicarbonate of soda, salt and pepper
until the mixture is smooth and thick.

Dry the
prawns on kitchen paper and dip several at a time in
the batter until well coated.

Lower the battered
prawns into the hot oil and deep-fry for 3 minutes
until golden brown.

Drain on kitchen paper and serve
with Napoli Sauce.
