Bacon and Egg Flan (Sformato di Pancetta e Uova)

Ingredients

225 g/8 oz
short crust pastry (basic pie crust)

25 g/1 oz/2 tbsp
unsalted (sweet) butter

100 g/4 oz pancetta, diced
small
-
1 small onion,
chopped
-
4 eggs
-
300 ml/1 1/4
cups single (light)
cream
-
Salt and freshly
ground black pepper
Method:

Grease a 20 cm/8 in
flan tin (pie pan). Roll the pastry out on a floured
board and line the flan tin.

Line with greaseproof
(waxed) paper and baking beans and bake blind in a
preheated oven for 8 minutes at 200°C/400°F/gas
mark 6.

Melt the butter in a saucepan. Add the
pancetta and fry (sauté) in the butter with the
chopped onion for 3 minutes. Drain.

Spread the onion
and bacon evenly over the bottom of the pastry.

Beat
the eggs and cream together and season with the
salt and pepper.

Pour into the flan case and bake at
190°C/375°F/gas mark 5 for 20 minutes until set and
golden.
