Carrot Omelet (Carote Frittata)

Method:

Heat the oil in a frying pan and add the onion. Cook
for 1 minute to soften.

Whisk the eggs in
a bowl and stir in the grated carrots, Parmesan and
seasoning.

Pour the egg
mixture over the onion and cook over a low heat
until the base of the frittata is golden color.

Put the pan under
a hot grill to cook the surface. Cut the frittata
into wedges and serve hot or cold.
