Italian Snacks and Light Meals Recipes - Carrot Omelet (Carote Frittata) Recipe

 

Ingredients

  • 45ml/3 tbsp olive oil

  • 1 small onion, chopped

  • 4 eggs

  • 6 carrots, grated

  • 30ml/2 tbsp grated Parmesan cheese

  • salt and freshly ground black pepper


Method:

  1. Heat the oil in a frying pan and add the onion. Cook for 1 minute to soften.

  2. Whisk the eggs in a bowl and stir in the grated carrots, Parmesan and seasoning.

  3. Pour the egg mixture over the onion and cook over a low heat until the base of the frittata is golden color.

  4. Put the pan under a hot grill to cook the surface. Cut the frittata into wedges and serve hot or cold.
