Cheese Fritters (Sciatt)

Ingredients

175 g/6 or/1 1/2
cups rye flour

150 g/5 or/1 1/4 cups plain
(all-purpose) flour

Salt
-
250 ml/1 cup
cold water

150 g/5 oz
Mozzarella, cut in cubes

15 ml/1 tbsp Grappa or
brandy
-
Oil for deep-frying
Method:

Sift the flours and salt into a bowl. Make a well in
the centre and gradually whisk in enough of the
water to form a smooth batter.

Leave to stand for
at least 30 minutes. Stir in the cheese and Grappa
or brandy.

Heat the oil until a cube of day-old
bread browns in 30 seconds.

Add spoonfuls of the
batter and cheese and fry until golden and puffy.

Lift out with a draining spoon, drain on kitchen
paper and serve straight away.
