Cheese Popovers (Calzone con Parmigiano)

Ingredients

100 g/2/3 cup
plain (all-purpose) flour

45 ml/3 tbsp grated
Parmesan cheese

5 ml/1 tsp salt

2 eggs, lightly
beaten

250 ml/8 fl oz/1
cup milk

15 ml/1 tbsp melted
butter

15 ml/1 tbsp oil
Method:

Preheat oven to 220°C/425°F/gas mark 7. Blend
together the flour, cheese and salt in a mixing
bowl.

In a separate bowl, combine the eggs and the
milk. Gradually add to the flour mix, stirring well.
Pour in the melted butter and blend thoroughly.

Divide the oil between 8 bun tins (muffin pans) and
heat in the oven for 1 minute.
Divide the batter evenly in the bun tins. Bake for
10 minutes.

Reduce the heat to 180°C/350°F/gas mark
4 and bake for 25 minutes until golden brown. Remove
from the tins and serve immediately.
