Italian Snacks and Light Meals Recipes - Cheese and Tomato Bread (Bruschetta al Formaggio e Pomodoro) Recipe

 

Ingredients

  • 60 ml/4 tbsp olive oil

  • 1 small onion, finely chopped

  • 3 garlic cloves

  • 4 plum tomatoes, diced

  • 10 ml/2 tsp chopped fresh oregano

  • 10 ml/2 tsp chopped fresh basil

  • Freshly ground black pepper

  • 15 ml/1 tbsp balsamic vinegar

  • 12 slices Italian-style country bread, cut into 1 cm/1/2 in thick slices

  • 10 ml/2 tsp grated Parmesan cheese


Method:

  1. Heat 30 ml/2 tbsp oil in pan and fry (sauté) the onion and 2 crushed garlic cloves until tender.

  2. Add the diced tomatoes and herbs and season to taste. Stir and heat thoroughly. Remove from the heat and add the balsamic vinegar.

  3. Toast the bread on both sides. Rub one side of the hot toast with cut garlic.

  4. Drizzle the remaining olive oil evenly over the bread pieces. Spoon tomato mixture over the hot toast and sprinkle with the cheese.

  5. Grill (broil) for 30 seconds and serve immediately.
