Cheese and Tomato Bread (Bruschetta al Formaggio e
Pomodoro)

Ingredients

60 ml/4 tbsp olive
oil

1 small onion,
finely chopped
-
3 garlic cloves
-
4 plum tomatoes,
diced

10 ml/2 tsp chopped
fresh oregano
-
10 ml/2 tsp chopped fresh basil

Freshly ground black pepper
-
15 ml/1 tbsp
balsamic vinegar

12 slices
Italian-style country bread, cut into 1 cm/1/2 in
thick slices

10 ml/2 tsp grated Parmesan cheese
Method:

Heat 30 ml/2 tbsp oil in pan and fry (sauté) the
onion and 2 crushed garlic cloves until tender.

Add
the diced tomatoes and herbs and season to taste.
Stir and heat thoroughly. Remove from the heat and
add the balsamic vinegar.

Toast the bread on both
sides. Rub one side of the hot toast with cut
garlic.

Drizzle the remaining olive oil evenly over
the bread pieces. Spoon tomato mixture over the hot
toast and sprinkle with the cheese.

Grill (broil)
for 30 seconds and serve immediately.
