Chicken and Aubergine Fritters (Fritelle di Pollo e
Melanzane)

2 eggs, beaten

g/2 oz/1/2 cup plain (all-purpose) flour

Salt

5 ml/1 tsp cayenne

5 ml/1 tsp capers
-
5 ml/1 tsp tomato
puree (paste)

175 g/6 oz/1 1/2
cups cooked chicken, finely chopped

1 small aubergine (eggplant), chopped

Oil for frying
Method:

Place the eggs and
flour in a bowl and beat well. Season with the salt
and cayenne.

Mix in the capers and tomato puree and
gradually beat in the chopped chicken. Stir in the
chopped aubergine.

Heat the oil in a shallow frying
pan (skillet) and gently fry (sauté) tablespoons of
the mixture for 2 minutes on each side until golden
brown. Drain on kitchen paper.
