Chicken Liver Savory (Piatto Appetitoso di Fegatini
di Pollo)

Ingredients

5 ml/1 tsp olive oil

4 large, round
crusty rolls

25 g/2 tbsp
unsalted (sweet) butter

1 large onion,
chopped
-
1 garlic clove,
crushed
-
100 g/1 cup
chicken livers, chopped

1 egg, beaten
-
30 ml/2 tbsp chopped
fresh oregano

Freshly ground
black pepper
-
75 g/3 oz/3/4 cup
Mozzarella cheese, chopped

1 tomato, sliced in
four
Method:

Lightly oil a baking sheet. Cut a small slice from the top of each roll
and carefully hollow out the centre of the bread
with a teaspoon.

Place the top and inside of the
rolls into a food processor and blend to make
breadcrumbs. Empty into a bowl and set aside.

Heat
the butter and fry (sauté) the onion and garlic for
3 minutes.

Add the chicken livers and fry for a
further 3-4 minutes until browned on the outside and
pink in the centre.

Add to the breadcrumbs and blend
in the egg and oregano. Season with the pepper.

Add
half the cheese and spoon the stuffing into the
rolls. Top with a slice of tomato and the remaining
cheese.

Bake in a preheated oven at 200°C/400°F/ gas
mark 6 for 10 minutes until the tops are brown.
