Italian Snacks and Light Meals Recipes - Chicken Liver Toasts (Bruschetta con Fegato di Pollo) Recipe

 

Ingredients

  • 450 g/1lb/4 cups chicken livers, trimmed

  • 15 ml/1 tbsp olive oil

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 2 onions, finely chopped

  • Sail and freshly ground black pepper

  • 50 g/2 oz/1/3 cup black olives, stoned (pitted) and chopped

  • 30 ml/2 tbsp chopped fresh basil

  • 8 slices bread, toasted and buttered

  • 15 ml/1 tbsp chopped fresh coriander (cilantro)


Method:

  1. Heat the oil and butter together in a frying pan (skillet) and fry (sauté) the onions for 3 minutes.

  2. Add the chicken livers and stir well. Cook for 6-7 minutes, until the livers are cooked but still slightly pink in the centre.

  3. Season well with salt and pepper and stir in the olives. Cook for a further 2 minutes. Remove from the heat.

  4. Stir in the basil and mash well until combined. Spread the mixture on to the toast and serve garnished with the chopped coriander.
