Chicken Liver Toasts (Bruschetta con Fegato di Pollo)

Ingredients

450 g/1lb/4 cups
chicken livers, trimmed

15 ml/1 tbsp olive
oil
-
25 g/1 oz/2 tbsp
unsalted (sweet) butter

2 onions, finely chopped
-
Sail and freshly
ground black pepper

50 g/2 oz/1/3 cup black olives,
stoned (pitted) and
chopped

30 ml/2 tbsp chopped
fresh basil

8 slices bread,
toasted and buttered

15 ml/1 tbsp chopped fresh
coriander (cilantro)
Method:

Heat the oil and butter together in a frying pan
(skillet) and fry (sauté) the onions for 3 minutes.

Add the chicken livers and stir well. Cook for 6-7
minutes, until the livers are cooked but still
slightly pink in the centre.

Season well with salt
and pepper and stir in the olives. Cook for a
further 2 minutes. Remove from the heat.

Stir in
the basil and mash well until combined. Spread the
mixture on to the toast and serve garnished with
the chopped coriander.
